This is one of the most tasty versions of stuffed chicken breasts I’ve tried. There is something in the combination of the chicken breast meat with cheese and bacon, that takes this dish one extra level higher. What’s even better – it is one of the simplest dishes as well!
- 2 whole skinless chicken breasts, halved
- 12 slices of bacon
- 2 oz grated Parmiggiano Regiano cheese
- 2 oz grated Gruyere cheese
- 2 oz grated mozzarella cheese
- 1-2 tbsp olive oil
First, make a deep pocket in each chicken breast half to accommodate the stuffing. Then, in a bowl, mix the grated cheeses together with your fingers.
Then, put 1/4 of the cheese mix in each chicken breast half pocket, close it and wrap each half in 3 layers of bacon. Hey, you can to more, if you like – for sure it won’t do any harm! 🙂
Grill it on medium heat, about 7-9 minutes per side, until completely cooked through. Then – let rest for 5 minutes, covered loosely with foil and serve.
