Lemon & herbs roasted hens

Hi there!

Very often my recipes are quite complex, but sometimes I like to go back to the “keep it simple” approach, and this is one of those times. Hens, simply halved, rubbed with olive oil and spices and grilled – quick score when you don’t want to get into complications.

So, ingredients:

  • 4 hens or small chickens, halved
  • 5-6 tbsp extra virgin olive oil (I actually prefer olive oil spray)
  • 3 tbsp lemon & herbs spice rub (can be substituted with any of your preference)

Preheat your grill to a medium heat and set it up for direct grilling – that’s when you are grilling the food right above the flames.

While your grill is heating, lay out the hen halves on a tray skin down, spray or rub with olive oil and sprinkle with the Lemon & Herbs spice rub.

I get my spices from the Green Valley Spices here in Sydney – their beautiful stall at the Parklea Markets. They also have an online store, where you can get their spices and seasonings, so if you’re a fellow Aussie – by all means, check these guys out. They rock!

Pat the rub into the meat with your hand, flip the hen halves over, skin side up, spray or rub with olive oil and sprinkle with the rest of the seasoning, patting with your hand.

Grilling – medium heat, directly above the flame, about 5-6 minutes per side, flipping three times, i.e. each side faces the flames twice.

It is very important to start the grilling on the skin side. The skin will the protect the meat from drying out quickly and keep the meat moist longer – this will make sure the hens come out juicy and succulent.

Once done – serve with your favourite veggies and enjoy!
